{berry buttermilk donuts.}

ingredients:

  • 2 sticks unsalted butter, at room temperature, plus more for the pan
  • 3 cups plus 2 tablespoons all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 1/4 teaspoons salt
  • 1 3/4 cups granulated sugar
  • 1/4 cup vegetable oil
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 2 cups blueberries (about 1 pint)
  • 1 cup raspberries

ONE.  Preheat the oven to 350F.

TWO.  generously butter a nonstick donut pan.  i put a small amount of butter in a microwave safe dish and when it was melted, brushed it into the pan with a small marinading brush.

ImageTHREE.  whisk 3 cups flour, the baking powder and salt in a medium bowl.

FOUR.  beat 2 sticks butter, the granulated sugar and vegetable oil in a bowl with a mixer on medium-high speed until fluffy.

FIVE.  reduce the mixer speed to low; beat in the eggs one at a time, then beat in the vanilla.

SIX.  add about one-third of the flour mixture and half of the buttermilk.  beat until almost mixed together.  add another one-third of the flour mixture and the remaining buttermilk. beat until just combined. add the remaining flour mixture and beat.  do not over mix!

ImageSEVEN.  toss the blueberries and raspberries into the dough mixture.

EIGHT.  spoon into donut pan.

NINE.  bake for 40 minutes.

TEN.  flip donuts out onto a cooling rack.

ELEVEN.  enjoy with your favorite glass of milk or cup of joe!
